LOL I can't believe you don't have hushpuppies where you are! They are sort of similar to cornbread, but round and usually have chopped onions in them and they are deep-fried! In the South, all fried fish and seafood are served with hushpuppies! And with catfish, many Southerners eat cheese grits too! And of course, a big glass of sweet tea! #4240621

Hmmm..not sure exactly what grits are..I think they are a corn product, but they are little grains like rice until you cook them and then they plump up but not as much as rice. Some people like grits with eggs and some people put sugar on their grits. But I never cared for them for breakfast, but when I was in Tallahassee, my neighbor had a fish fry, and I ate cheese grits for the first time and liked them. Did you not ever watch Mels' Diner? There was a waitress on there named Flo (if my memory is correct) and her saying was "Kiss my grits!" And Chris, where is "over here"? I know about hushpuppy shoes, but Southerners think of the other kind of hushpuppy when we hear that word! Some seafood/fish restaurants serve hushpuppies as kind of an appetizer for you to nibble on til the real food gets here! #4240954

Ok, here is something about grits:

There is no such thing as a 'Grit Tree'. Southerners like to hide a smile when a Northern friend wants to know where grits grow.
Grits are coarsely ground corn or hominy cooked as a cereal or a side dish to the Southern breakfast of Eggs, Bacon or Country Ham, Red-Eye Gravy and Biscuits.

I was in the South a couple times and I didn't care for some of the food. I asked for a cheeseburger once and they didn't know what that was LMAO. They had to ask me what it was. That was in NC. I asked f or k etchup when it came and they thought I was weird. HA #4240969

Red Eye Gravy

According to legend and not necessarily facts, Andrew Jackson (1767-1845), 7th President of the United States, who was an American General at the time, called his cook over to tell him what to prepare. The cook had been drinking "moonshine" corn whiskey the night before and his eyes were as red as fire. General Jackson told the cook to bring him some country ham with gravy as red as his eyes. Some men nearby heard the general and from then on, ham gravy became "Red Eye Gravy."

COUNTRY HAM AND RED-EYE GRAVY

Country Ham is a classic in Kentucky. The term "red-eye" supposedly comes from the little red circles or "eyes" of grease that form in the gravy on the plate.

Vegetable oil
8 slices (1/4-inch thickness) raw country ham
3/4 c. black coffee
1 tsp. granulated sugar

Heat a few drops of oil in a large skillet until skillet is medium hot. Lay ham slices in skillet. Cook on one side for 8 minutes over medium-high heat. Turn slices and fry 8 minutes more. Pour coffee into skillet with ham slices. Sprinkle with sugar and stir. Cover and let simmer over very low heat for 5 to 10 minutes. Serve ham and red-eye gravy together. 8 to 10 servings.
