Pepper Experiment

I used some directions I found on the internet to try making my own chili oil. Unfortunately, the oil developed a mold within about a month. So I washed off the chilis and used them for photos instead. I guess I'll stick with fresh and dried chilis for cooking!

I love the look of these chillies, Martha! I can't help you much with the chillies, but I have read similar with sundried tomatoes and olive oil. The oil becomes rancid, so the tomatoes should be eaten within a short time frame after preparing them. I think the commercial bottling/canning companies must use heaps of preservatives. Thanks so much for the feedback on the photo, and on the chilis! Further research tells me such oil needs to be used within a month which kind of defeats the purpose of having a bottle of it handy in the fridge, IMO! I'll stick with drying these little guys. I had not noticed that, Debbie! Another interesting point...after the initial set of photos, I left the peppers out in my studio/office thinking I'd have time for more pictures. I didn't get back to them with the camera but they were still looking pretty good 2 weeks later!
