New Mexico is famous for their delicious chile. Every fall the green chile is roasted pealed and frozen for all the wonderful chile dishes to come this winter. Some of the chile is dried and allowed to turn red, strung and hung in what is called a ristra. A young chef roasts green chile in the foreground surrounded by colorful ristras. Delicious!
