how to shoot high key portraits

How much light do you put on backdrop for high key portaits so the floor will be as white as the background?

If the backdrop is white about 1/2 stop more than whats on the subject. Some say 1 f-stop. If you go too high you'll get glare from the background and everything looks dull and washed out.
And this is a smooth white surface right? Because if you just try hanging a white sheet up and it has folds and wrinkles, you're still going to see them. You can't over expose those out.
