How to shoot black and white images

Hi I work for an organisation which has a 1000+ strength, it is a software development company. Still life Photography is my hobby. I have been assigned with the task of shooting the moods of the organisation in B&W. The subject looks very abstract and I am not really sure where to start and how to go about. One example is to capture people sleeping at their desk (for this kind of work digital is the best as it can be used as candid cams, but I don't have one and I want to shoot only films). Can any one suggest some better subjects/areas? I have a Minolta HTSI plus with 28-80 and a 70-300 DL macro lens. Also I have never tried my hands on B&W. All I know about B&W is that the gray tones speak a lot than their color cousins and that aged people with wrinkles on their faces are great subjects of B&W. Give your valueable advice on B&W work also. Thanks in advance.
