  Roberto,
In general, and this includes B&W films, pushing a film increases contrast and graininess. The more it's pushed, the greater these effects. However, how much the effect occurs with one particular B&W film and how much it occurs with another can differ. You will need to experiment with some B&W films to find what you like best.

Regarding developing adjustments, you should go to the film manufacturer's web site and download the data sheet for the specific film. Look for the section about developing recommendations. Use that as a starting point. I know Agfa, Fuji and Kodak all have their data sheets available as PDF files. Look in the "customer support" area of the site. You may have to poke around a bit to find them.
