how to shoot interiors


I was asked to shoot some photos of a mall interior. They are looking for shots displaying the full corridor so great depth of field is needed. Also want shots to include people shopping. In addition to artificial light (florescent), there are skylights in certain areas. Wondering if anyone could explain how to determine lighting? Use ambient reading or flash? or both? How would I determine the correct settings if using both? Would I be correct in assuming a high speed film and do you have any suggestions? Anything else you can add that you think may be relevant?
