what mode to use when lighting changes


I need a little help. I am really just starting out taking pictures and I love taking portraits especially outside. I like to use the manuel mode and set my own aperature and shutter speed, but I am not sure what to do when the lighting where I am changes during the photo shoot. Especially in taking pictures of couples for their weddings I follow them around and the light changes so much that sometimes the pictures are over exposed or under exposed. I know I need to adjust based on the meter in my camera, but there are times I forget and then I miss a candid moment because of exposure and change in lighting. Would it be better to just use the Av mode? I read that the Manuel mode takes better photos? Any thoughts on this would be wonderful. Thanks

A lot of material there but here are a few FWIW comments:

One obvious solution if you experience problems forgetting to change settings as the light changes: use a more automated mode. If you're trying to control depth of field or other compositional elements, then by all means use aperture or shutter priority.

I don't often use P mode, but if the goal is to capture fleeting shots such as candids, then P mode can help ensure that you 'capture the moment.'

Lastly, I'm not convinced that manual mode 'takes better photos.' It's great if you have a lot of time to setup a shot and think about it. But if you're doing anything on-the-fly, or the situation is changing rapidly, manual mode may be a hindrance to Better Photos.
