New camera and incredibly lost!

I am expecting my new Canon Rebel XTI in mail any moment. After doing much research,I am very lost! I have been using point and shoot digital for so long,(my photos have always turned out great on this camera) but, this is like a new ballgame! I have some basic knowledge of the terms. I am now doing fire photography and would like lens ideas for this please. Which would be great for fires during night or day. Any help appreciated!! Remember, be gentle, I'm a newbie at manual digital!! But,,eager to learn!!! Thank you!

"Fire photography"?

You got to be more clear than that, Jillian. Please explain. Burning houses? Camp fires? Hearth fires? Industrial furnaces? Time of day? Background? Ambient lighting? People in the frame? Distance? And what kind of photos will you be trying to make? Please describe. Blurry? Focused? Shallow DoF? deep DoF?

But I do have at least one bit of good news for you:
dSLR's don't neccessarily operate manually only. They have all sorts of settings for scenes, automatic, programmed, and half-automatic.

Jillian, you'll find that your XTi does have a "point-and-shoot" mode, actually. (The green square icon, on the main dial.) Set in that mode, the camera will attempt to figure everything out for you, to render the best exposure.
However, you should do your new camera justice, and try to get up to speed on the Tv, Av and P modes, if not M. You'll find so much more creative control in these modes, when the camera stops making all the decisions for you.
This will sound like a B.P. plug, but it isn't really---I loved Jim Miotke's "BetterPhoto Guide to Digital Photography" book---I bought it with my Sony P&S a year and a half ago, (and didn't even know this website existed.) I was a total newbie to photography, too, at that point, and the Sony H1 was my first-ever camera. It has manual and semi-manual modes, very much like an SLR, which I wanted to learn, specifically so I wasn't always in full-auto point-and-shoot mode! That book really broke it down very simply and clearly for me, was an easy read, had great "exercises" to complete, and I immediately abandoned full-auto mode on the Sony, preferring to stay in Shutter or Aperture priority instead.
I just got the XTi a month ago, and I've never shot in "green square" mode on this camera, either! ;)
Just remember, you probably didn't really upgrade to all that an SLR has to offer, in order to take full-auto type pictures with it!
