Film not developed for a while

Is it true that film that is not developed quickly will be grainy when developed? Does this apply to all film types? Is this an issue for 4X6 unprofessional prints i.e. snapshots of my family?

I don't think it's as much an issue with snapshot film. I've known folks to keep it for months with no apparent ill effects. It's reasonable to expect temperature and humidity to have some effect on film chemistry over time.

I learned my lesson with Kodachrome that I left in the camera for months in a warm humid environment. I'm still tweaking that one perfect sunset slide in Photoshop to deal with the discoloration caused by my laziness.
