It depends. Do you want to single in on a single tooth, or get the whole mouth in focus? It would be the same settings for any other macro, larger aperature(smaller number) to single in on something and smaller aperature(larger number) to get everything in focus.

Well, I'd say that the "root" of your problem is going to be lighting and focus.

The illustrative photographs in dental journals are usually made with a 35mm camera having either a macros lens or some type of close up attachment, a ring-light for illumination, and a device that rests on the outside of the patient's mouth to provide support while you line up the shot and shoot the entire mouth. Nikon (if that's what you're referring to), has the specialty hardware available to do this type of photography. The instruction sheet with the lens should tell you how to set it to get the maximum depth of field (or mouth) for focus from the lateral incisors to the 3rd or 4th molars. See the "wisdom" in that?

If you don't have the instructions, look at the Nikon usa web site or do a search under Medical Photography.

I gotta go. Had an appointment at "tooth-hurty". [I can hardly believe I said that]
Mark
