20D Sharpness Problems

Hello, I am a total newbie who just bought a 20D because I'm wanting to take better pictures of my kids - you know, the professional looking ones you can hang on the wall as art. Anyway, I seem to be having a sharpness problem. These pics were taken on my couch with the window light shining on the subject. I have the Canon 75-300 III lense set at the maximum aperature because I like the shallow DOF (don't want to focus on my couch, just the kiddo). I can't afford a better lense right now, but I also have the "kit" lense that came with the camera though I don't use it much. Adobe PS came with my camera as well and I am learning how to use that but haven't really got the hang of it. I don't have a whole lot of time to photoshop my images as I work full time and have two small kids!! Any suggestions on how to improve my sharpness? BTW, I am shooting on Aperature priority mode in order to get the shallow DOF. I set the aperature as big as it will go, which I believe is like 5.0. I've attached three pictures, the one with my older son laughing is the only one that looks sharp to me though they were all taken with the same conditions. I don't think it's camera shake or moving subject issues because the wide aperature should cause a faster shutter speed, right?

Any feedback is greatly appreciated!
Michelle
