Help with available light and flash

I have two sessions next week..both outdoors with large families, 5 people possibly 6. Ok, here is my frustration. Do I choose a faster shutter speed to make sure no shake hence blur? Or do I worry more about aperture to make sure all is in focus? Also, do I meter for shadows or highlights? When metering with a hand held and you want to use fill flash, do I put the hand held meter on a specific setting? I am feeling nervous and wonder if anyone would help. There are kids and so I won't always be able to use a tripod...help.

Did anyone have any thoughts? Someone mentioned setting at f/8 or f/11, but don't know how to incorprate that into the other problems....

Quick question: Why not use a tripod? I'd use one.

I am certainly not opposed to one, just that sometimes with little ones, it is nice to have the freedom..
