Digital B&W

I have recently jumped into the digital photography pool and am interested in photographing B&W. I have a Canon EOS 20D which can take B&W pics in normal, yellow, orange, red, and green filter modes. I am interested in opinions about whether it is better to take photos in B&W mode or color mode and converting it in Photoshop. Also, are there any tips in printing in B&W on my Epson Stylus Pro RX600.
Thanks

I too have been happy with software conversions to B&W.
Sometimes, a minor tweak of contrast will make a converted B&W look even better.

(...never tried printing one though.)

Shooting colour keeps all your options open. Apart from Photoshop, there are lots of dedicated programs for converting to mono, duotone etc.
With 6 separate ink cartridges you should be able to get quality mono prints, but buy paper that is designed for the job rather than general purpose photo paper, and look into Epson's own advice on getting the best B&W. You may have to tweak the printer settings a bit to get "real" B&W.

Once the printer profiles are right, the paper colour will largely determine the final tone of the print...black is black, but white is paper without ink, and not all papers are the same shade.
I like Epson's peal finish papers and Canon's matte. I am also partial to textured stock, but my cheap glossy Megamart works well for mono prints, too. With black and white printing I do not like the flat, off-tone results produced with the other photo papers I have tried, but that is on my dye based Canon, and Epson inks are pigment based.
I am not the most demanding B&W printer, but if you are serious, get a sample pack of mixed papers (http://www.inksupply.com/paper.cfm#eam) and have a read of http://www.northlight-images.co.uk/digitalblack.html.
