I think Adams would still use a large-format camera, but he would drum-scan in the negatives and use image processing software extensively. There's a couple of people who are using special large format film cameras and scanning in the negatives, and getting more than 1 gigapixel (GP) of resolution. Being able to digitally post-process the image means they can capture exposure variations that Adams would have killed for. If Adams did shoot digital he would have chosen raw mode, not because of 'zones' but because he was a past master at working with the negative... and he wouldn't want a camera-interpreted image when he could start from what is effectively a digital negative, the raw file.
