Saving images in PS 6.0

Help! I'm borrowing PS 6 from a friend to try out the channel mixer for b&w's, but I'm having trouble saving the image. I currently have PS Elements, and when I save an image, I save it as jpeg, then a screen pops up that has Image Options (I set the quality to maximum), Format Options (I don't know what this does - I leave it at baseline standard). And - here's my question - for the Size option, I've always done 256 Kbps (I thought that the size affected the quality if less than this), but in PS 6, I only get choices of 14.4, 28.8, and 56.6 kbps. I don't know much about computers and software. Can anyone tell me what's going on and why I can't set the size higher?? Thanks.

Maybe I should add that I want the photos to stay high quality, so that I can have them printed up to 11x14 if needed. I don't know if that is relevant or not, but I know that some of you out there are computer gurus that can sort this out better than me!! :)
