Photography Question

white balance

Hey, with studio lighting I don't seem to have a hard time setting the custom white balance, but when I am outside the picture of the white object always looks gray or light blue. when photographing outside people's eyes do not look white to me. In fact, when I use PS and take a color sample with the eye dropper, the whites of their eyes look really gray. that is why I was trying to set the white balance. On the lcd screen the white object does look white but when downloaded to the computer it looks gray. any advice would be greatly appreciated.
