I think the most common way to get B+W these days is to delete the Red and Blue channels in PhotoShop. That will leave you with just one 8 bit channel (B+W).
You could also just change mode to grayscale, but since Green is in the center of the spectrum, it is best to delete Blue and Red.

  Hi Martha,
If your camera will allow you to take B&W (properly called "grayscale" in the digital world) you will get better detail since all pixels are used for the image and are not interpolated. However it leaves you without a color version if that might be important.
In PhotoShop there are a number of ways to create grayscale images from the incredibly simple of switching in the "mode" menu to choosing one of the RGB channels. The most flexible is to use the Channel Mixer function in the Image -> Adjustments menu then selecting monochrome. At that point you can alter the RGB channels to achieve the same effect of filtering the shot in camera or to mimic various types if film responses.
