color in black and white


I have seen numorous black and white images that have color added to them. For example, b&w pictures of babies with blue eyes. I was wondering how this is achieved, is it done in editing? Or when the picture is taken

  It's done in editing. With traditional b&w the print itself is hand colored with art pencils or paints. Digitally, a color image can have the color selectively desaturated to leave part of the picture in b&w and part in color (and the colors can be altered as well).
