Determining long exposure times


This may sound like a stupid question, as it seems everyone seems to know all about this but me, but how do you know how long to expose a night/dawn/dusk type of scene? I want to shoot a temple at night when the clouds are interspersed in the background- actually in the early, early morning, when the suns light is just peaking through, but it's still dark.
I'm using Portra 400nc, but Kodak's website doesn't really give any guidelines on that, except that I need to compensate past 10 seconds- which I understand. I'm using a 4x5 Toyo field camera, obviously on a tripod.
I have a Sekonic L-718- but if the reading is off the charts, if just shows Eu or Eo. It doesn't give seconds. Or maybe I just don't know how to make it- but the online literature on that didn't provide info either.
I got all the equipment from school, unfortunately, I was stupid enough not to ask someone before the weekend came.
Can anyone help out?

  Well, I don't know the exact correct answer, but what I would do is start with a wide open aperature and then set a correct shutter speed according to that aperature. If you want to stop the lense down, make sure you change the shutter speed accordingly, to even out the change in aperature.....ie, if you move the aperature 2 stops, then you have to change your shutter speed 2 stops. But always start out with a wide open lense to get the correct exposure. Good luck!

  You can get exposure guides that will give you starting points for unusual situations like shooting at night. Check out B&H. I know Kodak makes one and there is one call the Black Cat Exposure Guide.
