What exactly does a lens hood do when taking a picture?

  John-

A lens hood has two purposes, keep direct(sun)/inderect(reflected) light off the front element and protect your lens.

Why is keeping that light off your lens important? The stray light is what causes lens flare. That stray light also reduces the contrast of your photograph. The longer the foacl length of the lens the more important this is.

In light rain a hood will keep the front element clean. It's also keeps the front of your lens from getting banged up. If you bump something, rather than denting the filter threads the the much cheaper hood takes the hit.

It's somewhat important to use a hood that's "matched" to your lens. The matched hood gives you close to optimal shade for that particular lens.

A "universal" rubber lens hood isn't going to give you the results a matched hood will give you, but it's better than no hood. Actually the best hood is a rectangle shape (the same shape as a frame of film).
