Coconut Mousse with Mango and Blueberries

Description

This is my current favorite dessert. Coconut Milk Mousse with juicy mango and blueberries....the taste cannot be believed. Made with low fat coconut milk, non-fat buttermilk and mango and blueberries...(also has pureed lychees in the mousse). Very tropical tasting and perfectly light after a dinner. food stylist: ME! I created the recipe after being inspired by a Coconut milk sorbet recipe and having sold my ice cream maker on Ebay. Which category does one put a still life like this in???

I appreciate each and every single one! I love food photography and would love to make a career out of it. Murry..."yes", I am a former pastry chef. I used to do heavy buttery pastries with high fat cream but now do lighter, healthier desserts with organic grains and whole wheat flours and fruits. I have eliminated heart damaging fats (like butter)...replacing fats with fruit purees, non fat cream cheese and even tofu in some recipes. No one knows the difference! Thanks so much! #1561898
