  Some I've used:

- Photoshop Elements 2.0 (has a built-in panorama stitched)

It's okay, but doesn't do any special tricks, so your pictures will need to be taken well.

- Photostitch

Commercial product that does a good job. They also do various VR quicktime full 360 type movies from your pictures. Pretty good, but the interface isn't intuitive to me.

- PTAssembler / PT Tools

A software program that isn't really in distribution anymore, but available from some places online. Very good for people who are picky about their pictures and want it to be the best posssible.

- Straight photoshop/PaintShopPro/Gimp

Doing it by hand. I've done it this way before and is very very time consuming. Go with an automated process. ^_-

Try Corel Photo Album 6, it's not too expensive and it's good.
Enjoy
