Well, Robin, welcome to the digital world! You're going to love it! There are many different ways to get this look (as there are for everything you can do in Photoshop!). For this image, I made two layers, so I had the color version of the image on the bottom and a black-and-white version on top. Then I just used my eraser to bring the color back from the bottom layer on the tiger only. Have you taken any courses here at BetterPhoto?
