I often use HDR for my landscape shots, especially if a brighter sky is involved. I use Photomatix software (although there are a variety of HDR programs, including Photoshop and lately, newer cameras have an HDR mode). The advantage of HDR is that it balances exposure throughout the scene. Often, a single image will have proper exposure in the sky, and silhouettes in the foreground. Or, the foreground will be exposed properly, but the sky will be washed out. HDR allows you to chose the best of both worlds.
The main thing is to have several exposures from the same position. You can do this via exposure bracketing, or take the parent RAW image and expose it multiple time. Ultimately, I strive for exposures at -1, 0, and +1. But depending on the scene, I may do five exposures at 2/3rd stop.
