Sports Shots Mainly In Bright Sunlight

I will soon be shooting the New Orleans Saints Training Camp which commences starting July 14th and would like any and all info I can muster for as what would be the best color print film and film speed to use for stopping fast action. Most of my shooting will be mainly in bright sunlight in a very open practice field type environment with minimal shading. I will be shooting a Nikon N80 paired with a 28-80MM Quantaray 3.5-5.6 Lens and a Quantaray 100-300MM 4.5-6.7 Lens. Also have a 2X Teleconverter. Even under bright sunlit skies should I meter with my Grey Card rather than rely solely on my camera's meter - and what Mode do you suggest I do my shooting in such as Shutter Priority, Aperture Priority, Program or Manuel.

Also,I would like to do some of the night scene activities in and around Training Camp, but not sure on how I go about determining proper exposure time readings. How do you determine how long to give an exposure under low light conditions? This area is brand new to me. How do I know if I have to keep the shutter open for 3 seconds or 3 minutes? Please someone explain.
