Photography Question

I am going on a long awaited dream holiday to the Amalfi Coast in Italy, Salzburg, Bavaria and Paris - and have recently discovered the joys of photography other than happy snappies.

I own a Pentax MZ-50 with 2 lenses: Sigma AF-MF Zoom Lens 100-300mm F4.5-6.7DL and Sigma AF-MF Zoom Lenze MiniZoom Macro 28-80mm F3.5-5.6 II Aspherical.

I love black and white photography and have been quite successful with portait shots so far, but am still a beginner and experimenting with different compositions.

Do you have any tips on how I can best capture the "feel" and "athmosphere" of locals, stills and scenery during my holiday on film??? I know it's a bit broad this question, but am still quite a beginner and would be happy with any tips you could send my way.

I am not familiar with the photography jargon and so far have excitingly discovered the beauty of "open aperture" and different effects of lighting in b/w photography (doing real well here!).

What film am I best to use for both colour and b/w photos on my trip?

How do I best care for my camera during my trip (and film)?

Do you know of any reputable organisation that runs photo workshops in Paris?

I have include 2 photos to show you - this is as good as it gets so far.
