What setting on an Olympus 2100 do I use to take pictures of moving subjects?

It really depends on what effect you want to creat. If you want to have photo with motion in it use a slower shutter speed, and if you want to have a photo with a clear jump shoot pose use a faster shutter speed.

Joyce, With slow shutter speeds you should pan with the moving subject. I am sure that's want you meant to say. No?
