Exposure Compensation

I was just wondering, how do I know exactly when to use exposure compensation. I know that when the camera spot meters a white or black subject, the exposure is gonna be either overexposed or underexposed, but how do I know how much to compensate?

I found this works for me the best: If a white subject, I will overexpose 1 1/3 or 1 1/2, and for black subject, I will underexpose 1 1/3 or 1 1/2 depending on the camera I use. What about a bride with a white gown and the groom with a black tuxedo? To get the exact exposure, I always use a 18% grey card, which is small and light (I cut the 8x11 sheet into 4 and carry one), and read the exposure values from pointing the camera at the card. Just make sure the card cover the entire screen and you don't cast your own shadow onto the card. Hope this helps.
