Ideas
I am entering a contest in my town. The theme is "you never know" and there are no strict rules. I am a teen and just beginning photography sort of seriously. What do you think about doing a variety or should I stick to one subject.. (like my horse). Any thoughts?

Sounds like the contest is looking for something that is not expected, how about maybe a dog and a horse running together like the dog will out run the horse. Or maybe pan a photo of a dog making him look like he is running real fast and combine the photo with a horse troting. Hope that give you a little idea to work with.
