Im am going to the Maldives in feb 2005, what would be the best film to use, I know that the sun will be very strong and very very bright, it reflects off the white sand, I tend to favour fuji films

  I use Fuji Superia color print film [as a standard], mainly ISO 400. On a recent cruise of the Greek Isles, I used ISO 800 only. This enabled me take pictures indoors as well as outdoors. Yes, even the beaches of Mikonos.

I always bring a polarizer; this will cur your exposure by 1 1/2 to 2 stops. You might also want to bring one or more neutral density filters [ND-2, ND-4.] These will also cut down the light.
I never had a problem asmy EOS 3 can shoot at 1/8000th sec.

ISO 400 and 800 films might produce more grain than ISO 100 or 200. But, if you want to shoot indoors, you'll need a tripod and/or a flash. I've never noticed a significant difference in graininess, but there are those who'll argue that the higher the ISO rating, the more the grain. And, under some circumstances, they're probably correct.
